MAIN DISHES CASHEW CHEESE (food processor) 2 C Cashews 4 T Red Star Nutritional Yeast* 3 T Lemon Juice ¼ T Sea salt 2-3 cloves Garlic Variation : If you prefer not to use nutritional yeast, substitute with ½ Red Bell Pepper. Process in a food processor until creamy. Enjoy on cucumbers, crackers, or rolled into collard greens!

SunDried Tomato Spread 2 C sun-dried tomatoes (better soaked for 15-10 min) 3/4 C Olive Oil 2-4 Cloves Garlic 2-3 T Basil (dried) 2-3 T Parsley (dried) Sea Salt to taste Put in a food processor and blend it up reeeally well! spread on crackers, vegetables... or I prefer to.. just eat with a spoon :)
KALE SALAD (hands!) 2 Bunches Kale 2 T olive Oil 2 T Lemon Juice Salt and Pepper to taste ¼ C soaked raisins ¼ C pine nuts
De-stem the kale, cut finely and squeeze with your hands until tender. Add other ingredients, and let sit for at least 30 minutes for best taste! Squeezing the kale with olive oil, salt, and lemon juice makes it look "cooked"
WALNUT PATE (food processor) 2 C soaked walnuts (3-4 hours) Cumin to taste 1/4 C Nama Shoyu or Bragg's 2 Scallions 2 Carrots Teaspoon of basil or any other herb you lie Cut up scallions and carrots. Process all ingredients in a food processor until smooth (you might need to add 1/4 C water to make it run easier). Eat this pate with crackers, on top of a salad, rolled up in a collard green, or just with a spoon!
| SWEET DISHES
ALMOND MILK (blender)
2 C Water 2 heaping T almond butter 1-2 T Agave or other sweetener A bit of vanilla to taste Pinch Sea Salt
Put ingredients in a blender and blend!!! You can put the milk through a strainer to make sure there aren't tiny pieces of almonds from the butter. Keeps well in a fridge for 3-4 days. The "milk" will separate though, so shake well!
CHOCOLATE CREAM (food processor)
2 C Cashews (soaked at least 4 hrs) 1 T Coconut Oil 1/2 teaspoon vanilla 2 T Cacao 1/4 C Agave Nectar Dash sea salt Blend in a high speed blender till smooth. You can use it on fruits, eat like a yogurt or as a topping for some raw ice-cream!
CACAO SHAKE! (blender)
2 Frozen ripe bananas 1 Orange 2-3 T Cacao powder 2 T agave (or more!) 3/4 C Water
Optional: 1 T agave nectar for more sweetness, pinch of sea salt and vanilla flavor for taste, tablespoon of almond butter for richness.
Peel the bananas, cut in pieces and put in a zip lock bag in a freezer overnight. Blend banana, orange (peeled) and cacao in a blender till smooth. Use 3/4 Cup water or more if needed (to blend easier).
BANANA-LESS SMOOTHIE
 3 Plums 1/2 bag Frozen red cherries Big handful of Spinach Just enough water to blend (1/2 cup or more)
BLEND ingredients until smooth!
EASY ALMOND ROLLS (food processor) 2 C Almonds (unsoaked) 1 C Dried Apricots (unsulphured!) Dash Sea Salt 1/2 teaspoon vanilla
Put in a food processor- almonds with vanilla and salt first (till finely ground), then apricots. Roll into balls and into some shredded coconut (this way the balls won't stick to your hands!) You can also roll it into some more finely ground almonds instead.
